This recipe is SUPER easy and cheap to make. No excuses on healthy eating having a hefty price tag here! I’m a huge fan of broccoli so I’m always over moon at this time of year when I see my vegbox arrive with lots of this super powered green stuff. These fritters are also a great way of using up broccoli that’s on the turn.
I love grabbing these fritters straight out of the fridge as a healthy snack. Or enjoy them my favourite way – as part of a big mezze feast!
Ingredients
400g Broccoli
1 Onion
2 Garlic Cloves
5 tbsp Chickpea flour
½ tsp Cayenne
½ tsp Cumin
Salt and Pepper
Method
- Cut the broccoli into chunks and whizz up in the processor with the onion and garlic. Add the other ingredients and whizz up some more until it starts binding together.
- Using your hands make patties and then shallow fry.
Avocado dip
2 Avocados (make sure they’re ripe)
1 Garlic clove
A little bit of plant milk
Salt and pepper
Method
- Whizz all up in the processer until smooth.
